Dong Ding Oolong is a famous Taiwanese semi-fermented tea, descending from 19th-century Wuyi mountain seedlings. Its distinctive features are strong roasting, tight rolling into half-spheres and a rich bouquet with notes of roasted nuts, caramel, honey and osmanthus. Traditionally produced in Nantou County on Dong Ding Mountain, but today versions from other regions made using the same technology are also popular.
